Easy & Healthy White Bean Chicken Chili

This recipe is a perfect rotation in your weekly meal prep or to please a crowd! You can make it on the stove, in the crockpot or instapot.
Ingredients
2 Blue Runner Creole Cream Navy Beans Original 26 ounce cans
2 Blue Runner Creole Cream Navy Beans Creole Mirepoix 26 ounce cans
1 yellow onion, chopped
4 cloves garlic, chopped
2 lbs chicken breasts, cubed
1 container Terrapin Ridge Farms Hatch Chili Cream Cheese
1 cup chicken broth
Salt, pepper and rosemary to taste
Instruction
If doing stovetop or in the instant pot, saute onion and garlic first using a tablespoon of cooking oil. Then add in the chicken until slightly browned. If you want to save time you can use ground turkey or chicken here. Add remaining ingredients and let simmer until the chicken is cooked and the flavors are developed.
For the crockpot, you can dump everything in there and stir. Put on high for 1-2 hours then low for 2-3 hours. If you are leaving it all day then put it on low for 6-8 hours!
Top with cheese, sour cream, or avocados!
